Quinoa Banana Pudding

1 13 oz. can of coconut milk
1 + 1/2 cup of cooked quinoa
1/2 cup skim milk
1 Tbsp butter (or 1 1/2 tsp vegetable oil)
1 tsp cinnamon
2 ripe bananas
3 Tbsp honey
1/4 tsp salt

Blend all ingredients except the quinoa until smooth.  Combine quinoa and blended mixture in a pot, cook on stove until thick (~10 min).  May serve warm or cold.

Creamy Cabbage

cabbage
butter
salt & pepper
heavy cream

Chop cabbage, saute in butter until kind of soft.  Add some cream and cook until creamy.  Add salt and pepper to taste.

Homemade Dark Chocolate

1 cup cocoa powder
1/2 cup coconut oil
1/4 cup honey
1/2 tsp vanilla

Cover a small baking sheet (toaster oven size) with aluminum foil (makes it easy to get the chocolate out when you're done).
Melt coconut oil, add rest of ingredients, stir and heat again to melt honey into mixture, stirring until smooth.
Pour chocolate into baking sheet, spreading with a spoon.
Refrigerate for 1/2 hour, then remove and break into pieces.
Store in the refrigerator.
